Nothing says comfort food like a heaping serving of meatloaf! This meatloaf recipe is one that is sure to please the pickiest of taste buds! Try this recipe out for dinner tonight!
Simply Amazing Meat Loaf Recipe
For 10-12 Servings
For Meatloaf:
- Ground Beef, 2 lbs
- Bread Crumbs, 1 cup
- Milk, 1 cup
- Parmesan Cheese, 1 cup
- Eggs, 3
- Onion, 1 Small, Diced
- Garlic (minced), 3-4 cloves
- Parsley, 1 tbsp dry
- Italian Seasoning, 1 tbsp dry
- Salt, 1/2 tsp
- Pepper, 1/2 tsp
Sauce:
- 2 Cans Diced Tomatoes (I love Del Monte diced Tomatoes with Basil, Garlic, & Oregano)
- Brown Sugar, 1/2 cup packed
- Dry Mustard, 1 tsp
- Worcestershire Sauce, 5-6 splashes
Directions:
Preheat Oven to 350 Degrees. First you will make your sauce. This gives it time to marinate before placing on your meatloaf. First, drain as much juice off the tomatoes as possible. Combine diced tomatoes, Brown Sugar, Dry Mustard, and Worcestershire Sauce in one mixing bowl. Set to side for now.
Now for your meatloaf. First, combine bread crumbs and milk. Let this mixture sit for a few minutes to let the bread crumbs soak up the milk. Now mix in Parmesan cheese, eggs, diced onions, parsley, Italian seasoning, salt and pepper. Finally, add in the ground beef and mix by hand. Mix until everything is well blended, but try not to over mix it as it can become tough. Form into 1-2 meatloaves on your drip pan. I prefer to make two separate meatloaves. This gives two extra end pieces, and could be frozen as an easy heat up dinner for a busy night.
Top the meatloaf with the tomatoes from your mixture. There will be left over liquid you can use at the end. The idea is to get as much of the tomatoes on top as possible. Now, take some aluminum foil and tent over meatloaf and place in oven. Bake for 50 minutes. Remove aluminum foil from meatloaf. Continue to cook for an additional 20-30 minutes, or until done in the middle (No pink). Immediately after removing from oven, top off with some of the remaining liquid from your tomato mixture. Don’t worry, it will warm up fast on the steaming hot meatloaf!
Slice into large slices and serve hot! This recipe goes great with our lemon herb green beans and some mashed potatoes! Enjoy!
