With the holidays comes my, favorite pastime, food.  Having four very different kids, I am always busy. I never seem to ever just relax.  Even when I am watching TV, I normally have my back to it while working on my computer. So when I get to enjoy from favorite activity of cooking and baking, you will find me in my happy zone (also known as the kitchen).  Most of my recipes are good for every holiday, but pies seem to be more specific to Thanksgiving and Christmas.  One of my family’s favorite pies is pumpkin pie.

One of the most rewarding aspect to food preparations is crafting something from scratch.  The joy you receive from hand crafted an item that someone else enjoys, is an awesome feeling.   I am not without my struggles in the kitchen.  I have a small case of “Rachel Ray Syndrome.” Cooking a ton of different recipes comes easy to me.  Baking on the other hand, not so much!  Since receiving a kitchen aid stand mixer,  I have made it a goal to change this!  The goal is to conquer baking!

Since mom and chef seem to mean the same thing, part of our journey will be sharing our kitchen with you! I have this amazing box of recipes that I inherited from my grandmother.  She loved cooking and baking, which is awesome since she had five boys to feed!  Over the next year, I will be diving into these recipes to share with you!  Check out this Easy Pumpkin Pie Recipe

Easy Pumpkin Pie Recipe:

What you need:

  • 15 Oz Can of Pumpkin Puree
  • 14 oz can of Evaporated Milk
  • 3/4 cup sugar
  • 2 eggs (lightly whisked)
  • Cinnamon, 1 Teaspoon
  • Nutmeg, 1/2 teaspoon
  • Ginger, 1/2 teaspoon
  • Salt, 1/2 teaspoon
  • Pie crust, unbaked

Pre-heat your oven to 425 degrees. In a large mix bowl, whisk two eggs lightly.  Then combine all ingredients (other than pie crust).  Mix on low-speed for two to three minutes.  Pour mixture into your unbaked pie crust.  Place in oven and cook for fifteen minutes. Reduce oven heat to 350 degrees and continue to baked for 35-40 minutes.  Pie is done when you can insert a knife (or toothpick) and pull out clean of any pie.  Let cool, slowly.  You can serve warm or cool. Top with whip cream for an extra layer of flavor.
