This time of year is so busy and night-time is coming quicker and quicker!  With clubs, work, and appointments we stay busy most days of the week.  The most essential tool in my kitchen is my slow cooker! I currently own two six quart slow cookers, and plan to buy a couple more this year just for the holidays. In an effort to not get stuck in a rut, I am constantly changing up recipes.  So when my husband asked me to fix some pineapple chicken, I decided to change it up and throw it in the slow cooker!  This slow cooker pineapple chicken recipe is so simple and is perfect for adults and kids alike!

Slow Cooker Pineapple Chicken Recipe

What you need:

  • 1 1/2-2 lbs of boneless chicken (frozen is fine to use, I even prefer it!)
  • 2-3 cans of pineapple rings in pineapple juice
  • 5-6 cloves garlic (minced)
  • 1/4  cup brown sugar
  • 1/4 cup of soy sauce
  • 2 tablespoons corn starch & 1/4 cup water
  • 1 teaspoon sesame seeds
  • 1 tablespoon chopped parsley

Directions:

Start out by mixing juice of the pineapples, brown sugar, soy sauce, and garlic in the bottom of the slow cooker.  Cut up pineapples into smaller pieces.  Place pineapples and chicken into slow cooker.  Take a large spoon  and gently toss mixture so that everything is covered in liquid.  Cook on low heat for 5-6 hours (or 2-3 hours on high if need be).  If you will be home while this is cooking, you can stir once or twice during the cooking process.

In a small bowl, mix together corn starch and water.  Add into crock pot after initial cooking.  Stir into slow cooker and turn on high. Cook for an additional thirty minutes to thicken sauce.  Top with chopped parsley and sesame seeds.

This slow cooker pineapple chicken recipe goes great over rice and makes great left overs!
