Sausage, Peppers, and Onions Recipe

Ingredients:

  • Smoked Sausage Link
  • Red Bell Pepper
  • Yellow Bell Pepper
  • Jalapeno Pepper
  • Large Yellow or White Onion
  • Salt
  • Creole Seasoning
  • 2-3 tablespoons olive oil (depending on pan size)
  • Large skillet
  • 2 cups rice, cooked

Directions:

Start out by preparing your rice, as this takes the longest. Cut up your bell peppers and onions into large chunks. Then slice your sausages up into small medallions. Now, it’s time to slice your pepper. If you are serving children, I recommend removing all seeds and veins prior to chopping up. This takes the heat out and leave the flavor. Chop up into tiny pieces. Toss all the vegetables and sausage unto a hot, large skillet with olive oil. Sure on medium heat for around 10.minutes or so. Cooke until you get a nice browning on sausage and peppers, and the onions are nicely good down. Season to taste with salt and creole seasonings. Serve over rice. When serving to children, let them try it without the Creole . A nice substitute for Creole season is soy sauce. It packs flavor with our the heat. Hope you enjoy!
