Slow Cooker Fajitas Recipe- Simple and Scrumptious!

Life is hectic with four children. There are always doctor and therapy appointments, after school activities, and sports to get them to and from. With all that energy needed, a well-balanced meal is a must! So any meal that has vegetables included in the main course is a win for the parents!

In our home, the slow cooker is used more than the oven. At least three meals a week are cooked in our slow cooker, and sometimes even more. One of my favorite meals is our slow cooker fajita recipe. The meat melts in your mouth, and the vegetables are oh so tender! The best thing about this slow cooker fajita recipe is its super simple to make!

Slow Cooker Fajita Recipe

Ingredients:

  • 2 lbs Beef, Chicken, or Pork
  • 2 packets of Fajita seasons
  • Large Yellow or White Onion, sliced in long slices
  • Red bell pepper, sliced
  • Yellow bell pepper, sliced
  • 1 can Rotel tomatoes
  • 1/4 cup water

Directions:

Combine all these in your crock pot. Cook 6 to 8 hours on low heat or 4 to 6 hours on high heat. The longer it cooks, the more tender the meat! Serve on tortillas with any of your favorite toppings. Enjoy!

Slow Cooker Zuppa Toscana – Rich & Creamy!

Slow Cooker Zuppa Toscana   Going out to eat is a big deal for our family.  We wed young, and had children just as young.  So going out to eat any where more than McDonald’s has always been a privilege.  As the years have gone by, we have increased the amount we go out, but not by much.  We may go out to eat once or twice a month.  Our goal is to have as many meals at home gathered around the kitchen table as possible.

   When we do go out, the kids and I almost always know what we want.  Having two children with autism, they do not like to stray from the usual.  The other two, normally pick with in a certain range of options.  My husband on the other hand, takes quiet some time to pick out something new each time.

 

   When it comes to the usual’s, Zuppa Toscana is mine.  For several years, I never tried to make it as I was the only one to eat it.  Over the last couple years,  I have managed to convenience every one to try it.  From age two through adult, they all love it!  With a budget in mind, making this in the slow cooker is a no brainer!  Check out this awesome Slow Cooker Zuppa Toscana Recipe Below:

 

 

Slow Cooker Zuppa Toscana Soup Recipe

(Better than Olive Garden!)

 

What you’ll need:Slow Cooker Zuppa Toscana

  • 2 boxes of Chicken Stock
  • 4 cloves garlic, minced
  • 1 medium onion, sliced and diced
  • 6 potatoes, sliced thin
  • 1 lb  ground Italian sausage
  • 1 cup heavy whipping cream
  • 2 tablespoons flour
  • 1 cup of finely chopped kale
  • salt & pepper, to taste
  • cayenne pepper, to taste
  • 3 to 4 slices of bacon, cooked and diced

 

Directions:

In a skillet, brown ground Italian Sausage.  Remove and drain grease from meat.  Combine sausage, chicken broth, onions, and garlic into the slow cooker.  Cook on low for 5-6 hours (or 3-4 on high).

Add in flour into the heavy whipping cream, removing any lumps.  Combine cream and kale into slow cooker and stir.  Cook for an additional 30 minutes on low.  Add in cooked bacon, salt & pepper, and cayenne pepper to taste.

 

 

 

Serve hot along side bread sticks and a fresh garden salad for a delicious, well-balanced meal the whole family will enjoy!

Creamy Chicken Spaghetti Recipe – Oh So Yummy!

Some nights, a home cooked meal is just what’s needed to fix a long day. We love a variety of recipes, but I love getting back to my southern roots. Good old fashion, southern cooking always fills the belly and comforts the heart. This Southern Chicken Spaghetti Recipe hits the spot!

When I was a kid, my mom was one of my lunch ladies. Some kids might not have like this, but I loved it! Back then, they made every thing from scratch and man did it taste good! My mom learned a lot of new recipes and even at six, so did I! Most every morning, I was at school an hour early, just hanging out in the school kitchen. Maybe that’s why I love food so much! Well anyways, the one recipe that I took with me was some good old southern creamy chicken spaghetti! It is such a simple recipe, but man does it pack some flavor!

Southern Chicken Spaghetti Recipe

What you will need:

  • Cream of chicken soup
  • Milk, 1 1/2 cups
  • Large can of Shredded Chicken
  • Extra Virgin Olive Oil, 1 tbsp
  • Medium Yellow/White, diced
  • Bell Pepper (any color), 1 diced
  • Shredded Cheese, 2 cup
  • Parsley, 1 tbsp
  • Oregano, 1 tbsp
  • Pinch salt & pepper
  • Garlic powder, 1/2 teaspoon
  • Onion powder, 1/2 teaspoon
  • Box of spaghetti noodles

Directions:

Pre-heat oven to 425 degrees. In a pot, bring water to a boil. Generously salt the water and cook noodles to “al-dente.” Drain and set aside. In a sauce pan, add olive oil and saute up the diced onions and bell peppers. Add in cream of chicken soup, 1 cup of cheese, milk, shredded chicken, parsley, oregano, garlic powder, onion powder, salt and pepper. Bring to a very low boil, stirring continuously, and remove from heat.

In an oven safe casserole dish, combine noodles and sauce mixture. Stir until well blended. Top off with remaining 1 cup of cheese. Place in oven for 15- 20 minutes uncovered, until cheese is well melted. Remove from oven and let cool for at least two minutes.

Serve this Southern Chicken Spaghetti Recipe  with some bread sticks and some lemon herb green beans for a delicious well-balanced meal
